Greek Pita Bread

Ingredients

  • 160 ml milk, at room temperature
  • 80 ml water at room temperature
  • 1 tbsp. granulated sugar
  • 2 tbsp. olive oil
  • 2 tbsp. dry yeast
  • 320 gr. hard flour
  • 1 tbsp. salt flower
  • 1 tbsp. thyme, fresh, chopped, only its leaves
  • 1 tbsp. olive oil, for frying
  • salt
  • pepper

 

For serving

  • Olive oil
  • Thyme fresh
  • Tzatziki

 

Instructions

  • Put the milk, water, olive oil, sugar and yeast in a bowl, and stir to mix.
  • Add the flour, salt and thyme to the bowl.
  • Knead until the mixture comes off our hands (we may need to help by flouring our hands).
  • Put the dough in a large bowl with a little oil and cover it with a film. Let it swell until it doubles in size. It can take from 30 minutes to 1 hour depending on the temperature of our house.
  • Once our dough is doubled, cut it into 6 equal pieces.
  • Open each dough with a rolling pin on a floured surface (diameter 20 cm).
  • Put a pan on a medium to low heat and pour the olive oil.
  • Bake each of our pies for 1-2 minutes on each side, until golden.
  • Cut our pies into 4 and serve with freshly chopped thyme and olive oil. Season with salt and pepper if necessary.
  • Serve with tzatziki
