Hyssop (Hyssopus officinalis), is an herbal plant, native to Southern Europe, the Middle East and the region around the Caspian Sea. It's a brightly colored shrub that ranges in height from 30 to 60 cm it has intense flowering and a scent similar to rosemary and thyme. The stem is woody at the base, from which grow a number of straight branches. The leaves are lanceolate, dark green in color and 2 to 2.5 cm long. It thrives in sunny places and warm climates. It's leaves have a bittersweet taste. The plant is used in perfumes and foods in liqueurs, sauces, puddings and sweets.

Hyssop has antispasmodic, expectorant, diaphoretic, sedative and anti-inflammatory properties. It has been used to treat sore throats, colds, bronchitis, inflammation, colic, as an appetite stimulant and as an expectorant. The herb is believed to help against fever and to be good for the heart. Its diuretic properties cause frequent urination, which can help reduce blood pressure. Finally the Hyssop can help dissolve stomach gases.

Making Tea:
Put 1-2 teaspoons of the dried leaves in a cup of boiling water and leave it for 8-10 minutes.Strain and drink up to 3 times a day.
