Tarragon (Artemisia dracunculus), also known as Εstragon is a plant that belongs to the family Asteraceae and it is native to Siberia and Mongolia, It grows near rivers and fertile meadows but also on dry lands. This plant is used in the the field of cooking as a herb for its aromatic nature, it consists of thin green glossy and branched leaves and is usually found in rivers, streams and arid soils. In its dried form, its taste is soft and sweet. It has many applications in cooking, such as enriching meat and fish sauces, boiled vegetables, mayonnaise, green salads, and it can even be used in ice creams or fruit salads while it can also flavor white wine vinegar. It is added at the end of cooking. Tarragon is one of the four main spices of French cuisine.

The plant is also thougth to have soothing, antipyretic, anti-inflammatory, antioxidant, hepatoprotective, hypnotic and sedative properties. It is used to stimulate the digestive process and help with bloating and indigestion, it's also a mild sedative and helps with insomnia, it has an emmenagogue effect and is taken to delay menstruation, it can help with toothache and general dental problems, and finally it is thought to be effective in the treatment of rheumatism and arthritis.

Making Tea: Put 1-3 teaspoons of the dried herb in a cup of boiling water and leave it for 10-15 minutes before serving.
