Description:

Quinoa is a shrub whose seeds are edible and come in many colors: white, red, black and blue. Its scientific name is Chenopodium quinoa and it belongs to the pseudo-cereals. It comes from South America. It has been cultivated by the Andean populations for three to four thousand years. Although practically a seed, quinoa is considered a complete cereal and a is good source of fiber. Quinoa seeds have twice the protein content of rice and wheat and are rich in minerals such as calcium, magnesium and manganese. They can be eaten at breakfast as cereal, at lunch in your salad or even at dinner, as an accompaniment, they have also been used as a beverage. Quinoa seeds are also gluten free. Roasted quinoa seeds are soft and slightly crunchy with a taste similar to that of nuts.

Quinoa has been shown to protect the human body against cardiovascular disease, type 2 diabetes, high blood pressure and obesity. It can help the digestive system function better and reduce the feeling of hunger.
Quinoa is less likely than other grains to be allergenic, making it an amazing gluten-free whole grain choice. Quinoa has an excellent amino acid profile. It contains all 9 of the essential amino acids compared to other cereals, making it a complete source of protein. Quinoa is therefore a great choice for vegetarians, people who are gluten intolerant and have difficulty getting enough protein from their diet.

How it is cooked: It can be boiled, like rice, in a ratio of 1 part quinoa to 2 parts water or broth, for 15 minutes, at a moderate temperature, until its seeds become almost transparent.
