Description:
The carob (Ceratonia siliqua) is a flowering evergreen tree or shrub in the Caesalpinioideae sub-family of the legume family, Fabaceae.
It is widely cultivated for its edible pods, and as an ornamental tree in gardens and landscapes.
The carob tree is native to the Mediterranean region and the Middle East.
It is a direct source of energy and protein.
Contains vitamin A, B, D vitamins, phosphorus, potassium, magnesium, calcium, iron, zinc, manganese, copper and is rich in polyphenols, glutamic acid and arginine.
Rich in fiber as it helps prevent constipation.
It contains a natural sweetener with a chocolate-like aroma, which is why it is used as a substitute for cocoa.
It is eaten raw as a fruit. Beware of seeds as they are hard and should not be consumed.
