Cardamom (Elettaria cardamomum) also known as green cardamom and true cardamom, is a native herbaceous perennial plant of the Zingiberaceae family, which originates from southern India. It is the most common of the species whose seeds are used as a spice called cardamom. It is widely cultivated in the tropics and has acclimatized to Reunion, Indochina and Costa Rica. It is found mainly in recipes of Asian cuisine. The shape of the cardamom seeds looks like a small bean, their texture is dry, they have a green color, they give off a cool aroma and they have a peppery and at the same time slightly lemonade and sour taste reminiscent of that of mint and fennel. Cardamom goes into sweets such as cakes, desserts, with milk, puddings and compotes. It also goes well with cold cuts, meat, poultry and fish. In oriental cuisine, cardamom highlights curry and pilaf. It can be added to food, whole or powdered. It has a strong, unique taste, with a strong aromatic, resinous aroma.

Cardamom can helps digestion and the removal of gas from the stomach and intestines. It has hemostatic properties and helps cleanse the blood.
