Cubeb (Piper cubeba) also known as Java pepper is a plant in the same genus in which the black pepper belongs, it is cultivated for its fruit and for its oil. It mostly grows in Java, Sumatra and other Indonesian islands. The fruits are harvested before they ripen when they are still green, and they are dried until they shrink. Cubeb pepper looks like black pepper, but is slightly larger and has a small tail protruding from each fruit. It has a smell that is pleasant and aromatic. It's taste has been described as spicy, intense, slightly sour and persistent and it resembles allspice and black pepper. Cubeb is used in Indonesian cuisine in dishes with meat and vegetables. Cubeb goes well with most spices such as: turmeric, allspice, bay leaves, thyme and oregano.
