Tonka beans are the seeds found in the fruit of the tropical kumarú tree or Dipteryx odorata, a tree very tall as it can reach up to 30 meters. The tree grows throughout South America, is found mainly in Venezuela, Guyana and Brazil. Tonka in the language of the native Galibi of French Guiana means "bean" and the kumarú tree is botanically classified as legumes (Fabaceae). The tonka bean is black and looks like corrugated almond. The aroma of tonka bean has also been used in the preparation of perfumes. It is reminiscent of vanilla, almonds, cinnamon, cloves, caramel and tobacco. It tastes like bitter almond and at the same time has a similar taste to caramel, chocolate and vanilla. The beans are used in very small quantities to flavor meat dishes, various soufflés, sweets, syrups, ice creams and cocktails. They are also widely used in French cuisine, and are popular with top patissiers for elaborate desserts, usually in combination with creams.

Tonka beans are aphrodisiac, stimulate the body, are recommended for relieving cramps, nausea, cough, convulsions, and swelling.
