White pepper comes from the same plant that produces black - Piper nigrum. The difference in
color is due to the harvest time and processing. For the production of black pepper, 
the fruit of the plant is harvested before ripening, while the white ripens on the plant
and simply removes the outer bark after harvest.
 
White pepper has all the properties that black has, although some claim that its taste is 
a bit milder. Always add the pepper to the end of the cooking to keep it fresh.
 
Ιt is simply usually preferred in light sauces or other recipes for aesthetic reasons.
 
It is also used in the production of homemade pickles and marinades.
What tradition says:
 
Pepper was cultivated in India since the 13th century. The Arabs transferred pepper by land to Alexandria of Egypt and so slowly 
 
acquired their monopoly. At that time, pepper in some areas was replacing the domestic currency.
 
In Byzantium, because it was very expensive, only the emperors and their yard enjoyed it. 
 
The control of India was finally conquered by the English, but in the meantime (16th century) 
pepper began to be cultivated in Sumatra, Malaysia, Cambodia and Madagascar. So when imports to 
Europe became massive in the 17th-18th centuries, pepper prices began to fall and ceased to be the privilege of the rich.
